Photo 1: Date Night

On Friday night, we actually got dressed and went out! This was our first time out since the EPIC flu hit our house 10 days ago. Let me tell you, we’ve been dyingggggg to get out of the house, so that’s just what we did. We went to a new spot we’ve never been called Christner’s (it was AMAZING by the way!) with our good friends Lindsay and Brantley, and it ended up being the best night. They are two of our favorite people in the world, so that coupled with our first night out of the house in DAYS made it heaven.

One of my best girlfriends, Kylee, came into town from Colorado this past weekend, and I could not have been happier. We spent the day at the pool catching up and snuggling her cute new baby boy. Is there anything better than catching up with one of your favorite girlfriends?!

Photo 3: Prep for the Week

I like to spend Sunday afternoon after church prepping for the week! I meal plan, grocery shop, and most importantly prep the food. Our weeks are BUSY with non-stop work, meetings, friends, and families, and far too often we look at the clock around 2:30 pm and realize we haven’t had lunch (or dinner!). Now that we are STARVING, we don’t even have the brain power to cook up something both nutritious and fast, which means we are having popcorn and a scoop of almond butter. That’s just not okay for everyday! Anyway, I have realized if I can squeeze in a solid 3.5 hours on a Sunday or EAAARRRLY on a Monday planning, chopping, and cooking we are much better off. And I’ve got to be honest with you, I really enjoy it! I put on an audio book and go to town. Most weeks I make 2 dozen egg muffins, chop veggies for salads, slice strawberries, wash produce, cut lemons and limes, grill turkey burgers, roast sweat potato “fries”, and cook shredded chicken. I also of course bag snacks like roasted chickpeas and dark chocolate chips, popcorn, and almonds. 

If you haven’t tried Sunday meal prep, you totally should… it’s a week-day game changer!
