With Mother’s Day on Sunday, we’re in brunch prep mode! We are hosting my sweet in-laws after church for brunch on the back porch, and I can’t wait! I love brunch for a zillion reasons, but mostly because I love eggs, avocado, oatmeal, and berries… could pretty much just live off those four things and be very, VERY, happy. So anytime I have the opportunity to host brunch, I’m ALL in!
This morning I sat down with a hot cup of coffee, a notepad, and browser opened to Pinterest to plan out our menu! I found so many amazing recipes, but three of them caught my eye, so I thought I’d share them with you.
3 Quick, Healthy, and Easy Brunch Dishes
Coconut Baked Oatmeal
Um, does this not look AMAZING?! I love an oatmeal bake, but this recipe is really taking it up a few thousand notches. Sweet, savory, and super healthy… what more could you ask for?! I think this one is definitely going on my list for Sunday.
Also, if you don’t follow Minimalist Baker, you need to ASAP! Her recipes are my favorite, always simple and delicious.
Berry Fruit Salad
There’s nothing better than a berry salad, but I often find that fruit salads are full of extra sugar! But this recipe keeps it fresh with lemon juice, 1 tablespoon of honey, and mint… just the way a berry salad should be! I’ve booked marked this recipe because I know I’ll be coming back to it again and again.
Baked Eggs with Spinach
Have you ever made baked eggs before? Oh my gosh, if you haven’t, you totally need too! It’s the easiest way to fancy up eggs, plus it’s delicious! Trust me!
I love this recipe because it’s packed with nutrients, but it’s also super simple! I think this dish will be the perfect way to round out our brunch.
