Sunshine + Iced Coffee!
Good morning! Today I wanted to share with you one of my new and very favorite afternoon pick-me-ups: Coconut Iced Coffee. A few weeks ago, I went to lunch with one of my best gal pals; when I arrived, she had already ordered me an Coconut Iced Coffee, to which I looked at her and said…. “Thank you! But I don’t like iced coffee.” She looked straight at me and said, “Ashley, you will like this Iced Coffee… I know you.” And of course, she was right. I am historically not a fan of iced coffee because I don’t love cold milk and I don’t like sugary sweet drinks, but this was neither!
Let’s just call it like it is: this coffee changed my life. I have since then perfected my very own version of this coconut-y goodness so I wouldn’t have to drive 45 mins. and spend $6.00 every afternoon… because, let’s be real, I was thinking about moving to be closer to this magical concoction. Here is my recipe for happiness in a cup! Also, just an FYI, it’s much better in our Hello Sunshine tumbler. Seriously, I did not make that up. #provenfact
- 1/2 cup Cold Brew Coffee
- 1 cup Almond Milk
- 1/4 tsp of Coconut Extract
- 1/2 tsp of Light Agave
- Combine all ingredients, then shake or stir over ice!
