
Trying Something New
I can sometimes find myself in a bit of a cooking rut, so this month I’ve been challenging myself to try 1-2 new recipes a week. I’m a creature of habit and love to just do what I know, so this really helps be try new things! Every weekend I pull a few new recipes to try over the upcoming week and I’ve found so many good ones. The key is to save on instagram or Pinterest (follow me here!) recipes throughout the week that look good. Then, once grocery day rolls around, you already have some great ideas!
Also, I can’t say enough good things about my recipe binder. I totally live and die by this thing. Such a great way to keep all your favorite recipes straight!

Carrot Apple Muffins
I made these muffins on Sunday and they are SO GOOD. Hearty and filling. The perfect afternoon snack. I cut the brown sugar in half, but other than that these are amazing!

Yogurt Sheet Pan Pancakes
This recipe is just plain fun! Make this over the weekend, I promise you won’t be disappointed. And make sure if you are GF/DF to just substitute! I used almond yogurt and her suggestions for GF flour blend!

Mexican Quinoa Stew
This was one of those really great recipes that you make and eat for lunch all week. Hearty, warm, and just so good. I added shredded chicken and it made it even more filling!

Easy Vegan Lasagna
I made this recipe a few weeks ago and we are still talking about it practically every day. If you make one thing, make it this. WOW WOW WOW. Also, I added a TON of sautéed spinach to the “cheese” part and it was super good!
