I have been on a serious kale kick over here. Like I have said before, I get hooked on an ingredient, and or recipe, and I will make the same thing for a straight week…. it’s a little aggressive, but whatever. Last week I made the same parmesan cod recipe 2 times, so this is literally a trend I can not break. Anyways, this week I’ve been stuck on this “Power Kale Salad”. A few weeks ago we went to one of our favorite brunch spots after church, Cask & Larder, and I ordered their kale salad. It was to die for. So I thought I would try and re-create it and make it lighter than the original (you know, sans the bacon grease and such!). So this is what I came up with, it is extra delicious and SUPER easy!
