Pumpkin Spice and Everything Nice

It’s Kyla here, Ashley Brooke’s little sister, bringing you good tidings of great scones!

You guys. The Holidays are OFFICIALLY here! That means you will have gobs of company at your house vacationing and eating and vacationing and eating. Tricky part is, not all of those people can eat all the things. Well, stay tuned because this recipe is a hit for all those involved! (Including you, the maker of said recipe).

Homemade GF DF Pumpkin Scones:

Ingredients for scone-

  • 2½ cups GF AP Baking flour (I use Bob’s Red Mill)
  • 6 Tbsp sugar
  • 1/3 cup pumpkin
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cloves
  • ¼ tsp ginger
  • ¼ cup cold earth balance butter
  • ¼ cup shortening
  • ½ cup pumpkin puree
  • 3 Tbsp cream (I use So Delicious original coffee cream)
  • 1 egg
  • 1 tsp vanilla

Ingredients for plain glaze-

  • 1 cup powdered sugar
  • 2 Tbsp coconut milk

Ingredients for spiced glaze-

  • 1 cup powdered sugar
  • 2 Tbsp coconut milk
  • ¼ tsp cinnamon
  • ¼ tsp nnutmeg
  • pinch of cloves
  • pinch of ginger

Instructions for scones-

  • Preheat oven to 400
  • Prep a cookie sheet with parchment paper
  • In a large bowl combine all dry ingredients
  • Cut butter and shortening with fingers into the dry mixture until the fat pieces are about the size of peas
  • In another bowl whisk together the wet ingredients
  • Combine the two mixtures being careful not to over mix
  • Turn the dough onto a lightly floured (with GF AP flour) surface and knead a couple times until it comes together
  • Form a rectangle close to 6×8 and a little over 1” thick
  • Spray a sharp knife with cooking spray on both sides and cut the rectangle length wise, then cross wise, then cut each of those rectangles in half to make triangles
  • Be sure there is about ½” between each scone on the sheet
  • Bake at 400 for about 15 – 18 minutes or until barely golden (you can always use the toothpick method)
  • Cool

Instructions for glazes-

  • Whisk the coconut milk into the powdered sugar until smooth
  • Do the same for the spiced glaze after adding the spices to the powdered sugar and whisking to combine (you can always add more sugar or coconut milk depending on how you want the consistency)
  • Spread plain glaze on scone then drizzle with spiced glaze and serve (or freeze)
