Easter Thoughts

Happy Easter Weekend and Good Friday, friends. I love Easter weekend and this year just feels extra special. I know things are weird, that we won’t be gathering in our church together, or having brunch with our families, or doing Easter Egg hunts with our nieces and nephews. But somehow it seems just as sweet, or even sweeter.

I’ve had more time this week to think about Easter than I usually do – normally rushed around and busy, getting things party-ready – and I’ve let my heart settle into the somberness and beautifulness of the week. For that I am grateful.

I’m hoping to make Sunday a special day for us even though it will just be the two of us. Last year we hosted Easter and I kept saying all day “Jesus has risen, Ryan’s beat cancer, and we have a ham… what more could you ask for?!“…. and the same rings true today.

This year we’ll do an Easter picnic in our backyard with whatever the store has in stock, honestly… I’m great with a frozen pizza if we have to, but I am drawing the line at dressing up! Ha! I told Ryan earlier today that there will be photos taken for our family photo albums… so be prepared. I never want to forget quarantine Easter. And of course we’ll stream church and FaceTime our families. It will be different, but the day will still filled with the same Good News, and for that, we we’ll celebrate!

Homemade GF/V Reese’s Cups

Like I said above, I have no idea what our Easter picnic will actually entail, but the one thing I do know is that we will have gluten free/dairy free homemade Reese’s Cups (recipe here)! I’ve been dairy free for almost 4 years – like haven’t even had a bite (makes me extremely ill) and honestly I don’t really miss it ALL that much. There isn’t anything I just have to have or crave, except Reese’s Eggs. I LIE IN BED AND THINK ABOUT THEM. Ugh. I miss them so much. I really really do. So this year I was bound and determined to find a recipe that would make all my Easter Reese’s Cup Egg dreams come true, and I found one!

I googled for a long time, but finally found a recipe that isn’t a copycat recipe (I really didn’t want to add in oil or shortening, etc) but that is enough like a Reese’s Cup that it will satisfy all the FOMO I have about not eating the real thing! And guys, this recipe is GOOD and only takes 4 ingredients!

Healthy 4 Ingredient Reese’s Eggs

I of course got a little ambitious and rolled out the “dough” (it’s best to make them 1/2″ish thick!) and made them into shapes, but truthfully these are ridiculously easy and debatably healthy! Also, I made mine with almond butter and almond flour because we were out of peanut butter and coconut flour… So you do you! I think it would be pretty hard to mess these up!

You’ll have to let me know if you make them and how they turn out. They are seriously one of the highlights of my week!

    Ok you convinced me! I’ve been seeing this recipe floating around the internet for weeks, but I always thought nothing could come close to the beloved Reese’s eggs. After seeing your post I decided to try the recipe and they turned out delicious!!
